Appetizer.
Fishsoup
Ingredients

For four persons you will need:
- 40 g butter
- 50 g carrot, onion, celery and leek
- 35 g wheat flour
- 1 l fish stock
- 1 dl cream
- 15 g carrot
- 15 g leek
- 15 g celery
- 5 g chives

Utensils
- Measuring cop, sauce pan, kitchen knife, cutting board, wire which, paring knife and scales.

Step by step
- Fry lightly the vegetables in butter.
- Put on flour, fry lightly to white and thin out with fish stock. Stand the mixture in 15 minutes.
- Drain the soup and add the cram
- Add the boiled sliced carrot, leek, celery and the chopped chives


Main course
Braised joint of beef
Ingredients

For six persons you will need:
- 1 kg steak
- 80 g onion
- 40 g carrot
- 20 g celery
- 20 g leek
- 20 g butter
- 2 bay leaf
- ½ tsp thyme
- 1,5 l stock
- 25 g tomato purée

- Utensils: kitchen knife, cutting board, paring knife, scales, string, frying pan, two pronged fork, sauce pan, strainer, measuring cop and wire which.

Step by step

- Remove sinews and truss up the meat
- Clean the vegetables and cut them in pieces, fry lightly in butter. Add the tomato purée. Add bay leaf and thyme in the stock and bring to the boil
- Season the steak wit salt and pepper. Brown the steak all around. Pot roast he steak tender (boil time 45 minutes to 150 minutes)
- Take the steak out of the stock. Drain the stock and boil it in. Thicken with brown thickening and season the sauce with salt and pepper. Boil it in 20 minutes. If the sauce is thin thicken it with maize flour. Drain the sauce.
- Slice the steak and arrange on plate.


Dessert

Ingredients

For four persons you will need:

- 3-4 dl rusk
- 3 tbs sugar
- 2 tbs butter
- 2 ½ dl cream
- 3-4 dl apple sauce

Utensils: frying pan, metal spatula, mixs master, mixing bowl, rolling pin and a plastic bag to crush the rusk, table spoon and measuring cop.

Step by step
- Crush the rusk and blend rusk, sugar with butter in the frying pan. Brown it
- Wipe the cream
- Arrange the rusk, apple sauce and cream in top of each other.
